How to Make Your Own Speculaas Spice Mix

Speculaas is a Dutch spice mix originally used in thin, crunchy speculaas biscuits and now also commonly used in cakes and sweet breads. It is particularly popular around Sinterklaas (the celebration of the name day of Saint Nicholas, patron saint of children) on December 5 and Christmas.

However, plenty of recipes call for speculaas all year round, such as this yummy spicy honey cake or ontbijtkoek.

Speculaas is available ready mixed in almost every Dutch supermarket. If you can’t get hold of it, it is really easy to put together yourself using spices you probably already have.

Ingredients:
4 tablespoons ground cinnamon
1 tablespoon ground cloves
1 tablespoon ground ginger
1 tablespoon ground nutmeg
1 tablespoon ground cardamom

Preparation:
Mix all the spices together in a bowl. Transfer to a jar with a well-fitting lid and keep in your spice rack for future use.
